Fall mornings are my favorite time of the year! Waking up to a crispness in the air and watching the leaves change into their beautiful array of colors while enjoying a hot cup of coffee is heaven to me. On the weekends, I like to make breakfast for my family and right now my son’s favorite food seems to be pancakes. Pancakes are wonderful in general, but I thought we could jazz it up and put a little fall inspiration into them. And with Thanksgiving this week I thought it would be perfect to make something special for breakfast for all of our family that will be visiting this holiday: Pumpkin Spice Pancake CAKE with Maple Cheesecake Cream! This is the perfect decadent breakfast (or brunch!) dish to get your fall morning started right!
Summer is coming to a close and it’s always a bittersweet time for me. I’m going to miss the beautiful, sunny days, but I’m also so excited for the fall and all the pumpkin spice goodies that I can’t wait to indulge in! In honor of the last week of summer, I wanted to make a treat we could enjoy while reminiscing about all the fun memories we made this summer. And it never hurts to throw a little something extra in there for us adults, right?! (My son is only 9 months old and isn’t eating sweets yet, so this treat is just for my husband and I – hence the booze!) My Boozy Bonfire Cheesecake Bars have the delicious flavor of S’mores with a kick of Irish Cream thrown in for an extra fun surprise!
Even though it’s September, the summer heat is still ragin’! My family and I are currently living in an adorable log cabin on a farm while my husband is in school. Unfortunately, there is no A/C in the cabin. We’ve managed to stay pretty cool thus far, but the last thing I want to do when it’s this hot is turn on the oven. But with no oven, how’s a girl supposed to bake her family a little something sweet for dessert?! I dove into my recipe collection and looked for anything that didn’t require an oven to prepare. Bingo! I picked up a handwritten recipe from my Grandma Lee. My Grandma Lee’s “Unbaked” Cookies will be the perfect treat on this hot summer day! No oven, no problem!
Have you ever had one of those weeks where everything that could go wrong, did go wrong? Well that was the type of week my husband and I had. By the time Friday rolled around we were just ready for the week to be done and needed some cheering up. Something sweet was what we needed! And what’s better to warm the soul than a warm chocolate chip cookie straight outta the oven?! Away to the kitchen I went to make just what the doctor ordered to cure a rough week, my brown sugar chocolate chunk cookies! These will definitely turn our frowns upside down and end our week on a cheerful note! 😊
Every Easter my mom gives my sister and I Easter baskets, left lovingly on her fireplace filled with lots of yummy chocolates and sweet goodies for us to snack on throughout the day. I always tend to eat waaaay too many of those chocolates for breakfast, but there’s still plenty of sweets leftover. Those leftover treats tend to be random little pieces of candy that I snack on over the few weeks after the Easter Bunny has come and gone, but I found a fun way to use up those leftover treats in a delicious dessert: Easter Basket Blondies!
